Full description

The company offers the technology of production ready-to-use growth media and activators for culturing of 3 types bulk starters: for production of hard cheese, tvarog cheese and collage cheese.
The media are composed of: milk base, buffering system, growth activator and anti-phage substances (the substance that protect from the development of phages  viruses killing good bacteria culture).
Ready-to-use growth media are supplied complete and require only dissolving in water and pasteurisation before use. Different types of media have had their compositions optimised for mezophile (optimal temperature 20-40°C) or thermofile (develop in the temperature to 45°C) cultures.
After cooling to the specified temperature the mix should be dosed with appropriate DVS (direct-vat-set) starter culture and incubated to the recommended pH value.
The prepared starter should be mixed and cooled to 4-6°C, then added in appropriate amounts to the milk vat.
The functions of the media are as follows:
- Balancing growth of bacterial strains
- Stabilising starter activity
- Reducing the production costs
- Standardising final pH value
